  • One large pork loin
  • Mustard
  • Seasoning (Dizzy Dust is what we used)
  1. Preheat cooker for 350 F. Set for indirect
  2. Lightly rub pork loin with mustard to hold your seasoning.
  3. Liberally coat the pork loin in your seasoning. Let sit until barbecue is up to temperature (we seasoned it the night before).
  4. Put drip pan underneath the grill and half-fill with water.
  5. Place pork loin on the grill.
  6. Cook until internal temperature reaches 140 F.
  7. Remove, tent in aluminum foil and wrap in a towel for 30 minutes. If waiting longer to eat, place wrapped pork loin in a cooler.
  8. Slice as desired and serve with whichever side dishes you like
