Cheddar-stuffed, bacon-wrapped mashed potato bombs

Bacon-wrapped mashed potato bombs

A great side dish or a great way to use up leftover mashed potatoes.
  • 2 lbs. potatoes
  • ¼ tsp. salt
  • 2 tbsp. butter
  • 4 tbsp. cream
  • 1 tbsp. milk
  • Cheddar cheese
  • 1 375g package of bacon
  • Dizzy Dust or other seasoning
  1. Peel potatoes, and cut into cubes.
  2. Place potatoes in pot, covering in cold water. Add salt
  3. Place pot on stove and turn burner on high until water begins to boil.
  4. Reduce heat to medium and cook for 15 minutes.
  5. Remove from heat and drain water from potatoes.
  6. Add butter, cream and milk.
  7. Mash until creamy, adding Dizzy Dust or your favourite seasoning in liberal doses along the way.
  8. Let cool.
  9. Cut up cheese into half-inch cubes.
  10. Cut bacon slices in half.
  11. Wrap cooled potatoes around cheese, forming a ball.
  12. Wrap bacon around ball as much as you can, and secure with toothpick
  13. Place mashed potato bacon bombs on cookie sheet. We got 24 on one sheet.
  14. Preheat barbecue to 375 F. Set for indirect cooking.
  15. Place cookie sheet on barbecue and let cook for 20-25 minutes.
  16. Remove from heat, and remove bombs from cookie sheet with a spatula.
  17. Let cool five minutes and serve.
