4 large potatoes
8 strips of bacon
1/4 cup olive oil
Swamp Venom seasoning or your favourite BBQ seasoning
Pinch of seasoning salt
1/2 cup of shredded cheddar cheese
Cut potatoes lengthwise into steak fries.
Soak fries in water for five minutes to draw out excess starch.
Dry fries in paper towel and put in a bowl.
Drizzle on olive oil.
Add Swamp Venom.
Toss fries until the seasoning and oil is spread around.
Preheat barbecue to 350 F. Set for indirect cooking.
Place fries on a cookie sheet, spread out so they don’t overlap.
Put cookie sheet in barbecue. Cook for 20 minutes.
Cut bacon strips in half lengthwise.
Remove fries from heat, wrap in bacon, and cook for another 20 minutes.
Remove, let cool a bit, and enjoy.
For final 5 minutes of cooking spread shredded cheese over top of fries.
